Analysis: In the Chaldean culture, pacha is an extremely popular dish. It involves the organs of a cow and, although this sounds disgusting, is actually amazing. However, it is extremely difficult to make. As a result, my grandma only makes it once per year, usually on Christmas. When I smell it in the kitchen, I get extremely excited, as this is one of my favorite meals.
